Oct 21 Barbecued Pork Sandwiches

Barbecued Pork SandwichesIngredients:

  • 1 lb. lean pork tenderloin, sliced 1/2-inch thick
  • 1 small onion, finely chopped
  • 1 medium garlic clove, minced
  • 15-oz. canned tomato sauce
  • 1 1/2 tbsp Worcestershire sauce
  • 1 tbsp. white wine vinegar
  • 1/4 tsp. table salt
  • 1/4 tsp. black pepper
  • 4 medium reduced-calorie hamburger rolls

Preparation:

  1. Heat a nonstick skillet over medium-high heat. Add pork slices in a single layer and brown 2 minutes per side. Do not crowd; do in batches if necessary. Remove pork and set aside.
  2. Add onion and garlic to skillet over medium heat until tender, about 5 minutes.
  3. Add tomato sauce, Worcestershire sauce, vinegar, salt and pepper to skillet; stir and simmer 1 minute.
  4. Add pork; spoon sauce over pork, cover and simmer 15 minutes.
  5. Divide pork among 4 buns. Top with sauce from skillet and serve.
